Mango Salsa
This Salsa goes great with the Jerk Pork.
Yield: 4 1/2 cups
Ingredients:
- 1/2 cup sugar
- 1/2 cup white wine vinegar
- 1 tsp grated lime rind
- 1/4 cup fresh lime juice
- 2 (26 oz) jars sliced mangoes, drained and chopped
- 2 small garlic cloves, pressed
- 2 small jalapeno peppers, seeded and minced
- 4 green onions, sliced
- 3 tbsp chopped fresh cilantro
Directions:
- Stir together the first 4 ingredients until sugar dissolves
- Stir in mango and remaining ingredients
- Cover and chill 8 hours
- Serve with pork or ham
